Pasta Delight

Ingredients

200g pasta
1 courgette
1 red onion
1 red pepper
olive oil
4 fresh tomatoes
sun-dried tomato paste
nutritional yeast
¼ pint soya milk
2 oz vegan margarine
plain or sauce flour
salt and pepper

Cook the pasta as per the instructions on the bag. Drain and set aside.

Cut the courgette, onion and pepper into small chunks and fry in the olive oil until golden brown. Prick the tomatoes and place in a bowl of boiled water for five minutes. Carefully remove them and peel away the skins. Then chop them up and add them to the vegetables. Add a teaspoon of sun-dried tomato paste to the vegetable mixture and stir thoroughly. Taste the mixture and season if necessary. Mix the pasta with the vegetable mixture and spoon into a large oven proof dish.

Melt the margarine in a saucepan and add a teaspoonful of flour to thicken. Continue to add flour until it is the consistency of porridge. Then slowly stir in soya milk and stir until the mixture is smooth. Then add three tablespoons of nutritional yeast, salt and pepper and stir again until smooth. Taste the sauce and add more salt and pepper if necessary and then pour it over the pasta mixture. Bake in a moderate oven for 30 minutes.

Cook your choice of spaghetti from any nice local Delicatessan.

Simmer 10 diced Roma Tomatoes seasoned with basil and thyme and your own amount of pepper and salt to taste. Simmer until it reduces to a honey consistency.

Pour over cooked spaghetti, top with freshly grated parmeson cheese.

Accompany with some Bruschetta of bread, olive oil, salmon and capers.

A bottle of Riccadonna Asti Champagne

Desert is Sorbet of Raspberries topped with a mint leaf for garnish .

    Enjoy.
Simple elegant and fast and not to mention delicious way to entertain on a special occasion.

tried lots but i keep going back to this simple yet very effective recipe:

Pasta with clams / muscles (seafood – very romantic!)

Youll need Muscles/clams (obviousley) shallots, garlic, white wine (1/2 glasses), cream (if you you are not counting calories, leave out if you are) and spaghetti / linguine (pref linguine)

Clean and dispose of any open shellfish, set your pasta on to cook.
Fry garlic and shallots (diced) until soft, not burnt – add white wine and reduce heat, pop in the shellfish and cover. The steam will then cook the shellfish. Cook these for ONLY 4/5 mins, until they open. Drain the shellfish, but keep the juice and then drain the cooked pasta, don’t need to keep the pasta juice. Keep the muscles warm by placing tin foil over the top of them and then with the juices from the shellfish bring to a simmer and add the cream, stir until it’s sauce like, add salt and pepper if you want, add the shellfish stir for 10 secs and then pour onto the pasta.

Serve with garlic bread, champagne and reap the rewards my friend!

    Hope this helps.

There is nothing more romantic, than just spaghetti , with super large meatballs, salad, with a creamy Italian dressing, and garlic bread. Hey, what are Italians for, if not for ROMANCE!

Everyone knows how to make spaghetti, don’t they? The only difference is to make your meatballs tennis ball size, and simmer them in your tomato sauce, until done. Make sure your pasta is AL-dente, meaning to be firm. I use Linguine, instead of spaghetti noodles, because it has a smoother taste, and texture. Happy Valentine’s Day to you and yours!
