    Maybe Torres says: u can do it. but, I’ve never seen him do it. He’s got a machine to heat chocolate though.
    A microwave would make your chocolate melted, cold and burned all at the same time. Beleive me I’ve tried it several times.

    I don’t know if you haven’t noticed, but I have been seeing very poor ratings on his good vids lately, and I think it’s because he’s made the change to his channel and what he stands for, and he is now taking away all the free vids he had up before and now selling them. No problem with him trying to make money, but I see more potential in his “free” stuff then his dvd stuff. That’s how I subscribed in the first place. COOKING COARSE! ha, but people can give me a thumbs down, I don’t care.

    no offense todd, yes this material is great, but I really hate when I watch a video of yours and your advertising a dvd. It just makes me feel that you’re just doing all this for the money. I know times are tough, but when I stumbled across your videos you should passion for cooking and you also had cooking “coarse” and “I hate cooking recipes”. What happened? You expressed yourself so much better the other way, but either way in this vid you are still informative and I give ya that. Take it ez

    Great video, however, why did you not melt the chocolate completely? It seemed to still have a paste-like texture to it, rather than it being ‘fully’ melted (i.e. completely liquid). Whenever I temper chocolate (not very often, and I’m not very good at it, due to the lack of an instant-read thermometer) it always becomes fully melted.

    BTW. according to Jacques Torres you can indeed temper chocolate in the microwave 🙂
